I've been approached to design a event site where there is a single calendar to enter events into, but have those events, through the use of categories be placed on other websites of member organizations.

I'm thinking it would be logical to create menu items to create the different categorical calendars, then use iframes to display them on the other sites, or am I missing something?

This system could grow to be quite large so any advice before I get started would be greatly appreciated.

Are these the customers sites or Joomla! Sites?

You have two options!

1. Ifame it like you said
2. use the JEvents Remote module loader and load in say the JEvents Calendar Plus modules or latest events module.

You can also create ical exports or event csv exports if the remote sites support them.
